A delightful pudding perfect for All Saints Wake.
Ingredients
- 1/2 cup sugar
- 1/4 cup flour
- 1 egg yolk
- 1 cup pumpkin
- 1 cup half and half
Directions
- Whisk together your sugar, flour and salt in a pot.
- Add 1/2-2/3 of your half and half and all the pumpkin then whisk.
- Cook over medium to high heat, whisking constantly.
- Mix the remaining half and half and the egg yolk together.
- Add a little of the hot pumpkin mix to the egg, stirring constantly to temper then pour back into the pot.
- Bring back to hot.
- Strain.
- Pour into cups or ramekins.
- Chill at least a few hours, if not overnight.
