Pumpkin Pudding

A delightful pudding perfect for All Saints Wake.

Ingredients

  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 egg yolk
  • 1 cup pumpkin
  • 1 cup half and half

Directions

  1. Whisk together your sugar, flour and salt in a pot.
  2. Add 1/2-2/3 of your half and half and all the pumpkin then whisk.
  3. Cook over medium to high heat, whisking constantly.
  4. Mix the remaining half and half and the egg yolk together.
  5. Add a little of the hot pumpkin mix to the egg, stirring constantly to temper then pour back into the pot.
  6. Bring back to hot.
  7. Strain.
  8. Pour into cups or ramekins.
  9. Chill at least a few hours, if not overnight.
